Welcoming the New Year with a Unique Dressing for our Quinoa! Last night we wanted to make something easy and quick because we both were starvin-marvin. So, we came up with a quick quinoa salad with homemade dressing from some random ingredients we had at home.

Balsamic Onion Dressing

INGREDIENTS

  • 1 Yellow Onion (diced)
  • 1 tbs Olive Oil
  • 2 Garlic Cloves (minced)
  • 2 tbs fresh Parsley (chopped)
  • 1/2 tsp Sea Salt
  • 1/2 tsp Black pepper
  • 1/2 tsp Oregano
  • 1/2 Cup Trader Joe’s Aioli Garlic Mustard Sauce
  • Several Splashes of Trader Giotto’s Balsamic Vinaigrette

PREPARATION

  • Drizzle olive oil in a large skillet over medium-high heat. Add onions; sauté until soft, about 8 minutes. Add parsley, salt, pepper, oregano, garlic.  Remove from heat and place in food processor.
  • Add Trader Joe’s Aioli Garlic Mustard Sauce and a few splashes of Trader Giotto’s Balsamic Vinaigrette to food processor.
  • Blend for 3-5 minutes or until thoroughly mixed.
  • Enjoy. #Yummo

This dressing was all Caleb’s idea to put atop our quinoa. We added sliced cherry tomatoes, peas and topped with feta cheese. We also used it as a dipping sauce for our french baguette.
I am so excited for all that 2014 has to offer. I am looking forward to continuing to experiment in the kitchen with Caleb and take beautiful pictures of our creations.
